Brazilian Cheese Puffs/ Pão de Queijo

Pão de Queijo or Brazilian Cheese Puff is a popular snack and breakfast food in Brazil. It is a gluten-free bread made with tapioca flour (sabudana flour), eggs and cheese. This puff is crispy from outside but amazingly soft and chewy from inside. The cheese flavor in this bread is extremely addictive. 

Tapioca or sabudana is free of gluten, nuts and grains so people with celiac disease and nut allergies will not have a problem consuming this food. Tapioca is a good source of protein, which helps with muscle building, healing and strengthening. It is rich in iron and calcium, which helps maintain bone health. Regular consumption of sabudana keeps blood pressure levels under control. The potassium in tapioca aids healthy blood flow and lowers the pressure on the cardiovascular system. It contains a good amount of fibre, protein, fats and carbohydrates which help you maintain good digestive health. Sabudana contains zero cholesterol. The presence of folate and vitamin B6 aid in the proper development of the foetus and prevent the occurrence of neural tube defects in infants.

Pão de Queijo/ Brazilian Cheese Puffs are addictive and filling for stomach. The recipe is very easy to make and the batter can be prepared in advance and stored for up to a week. With all the benefits of tapioca, these are the best snacks or breakfast items for growing kids. I also prepare few variants of this recipe on special occasions, which I will be sharing soon. Believe me, you will not have to run after kids to finish these up. Every time I prepare them, they are gobbled down with no complaints.

The mild salty cheesy flavor are heavenly and loved by kids or adults alike. Brazilian Cheese Puffs/ Pão de Queijo

Brazilian Cheese Puffs/ Pão de Queijo is a gluten-free bread made with tapioca flour (sabudana flour), eggs and cheese. It is a popular breakfast and snack food in Brazil.

Ingredients
  

  • 1/2 cup grounded tapioca pearls (nylon variety)
  • 1 egg (medium sized)
  • 3/4 cup milk
  • 1/8 cup olive oil
  • 1/2 tsp salt
  • 1/4 cup grated cheese (parmesan/cheddar/mozarella)

Instructions
 

  • Preheat the oven to 200 degree Celsius.
  • Grease your mini muffin pan. Line them with muffin liners and set aside.
  • In a bowl add egg, olive oil, salt and milk.
  • Whisk the ingredients well until combined.
  • Add tapioca flour in parts of three so that everything is easily blended.
  • Mix in grated cheese and combine well. The batter will be slightly runny.
  • Pour a small spoonful of batter in each muffin liner and bake for 15-20 minutes with the top rod of the oven on for the last 5 minutes. 
  • The puffs will rise up and should be slightly brown in color. Enjoy them as it is or with your tea/coffee or a hot cup of soup.

Notes

  1. I have grounded tapioca pearls of nylon variety in my mixer. I like the puffs made with roughly ground flour. You may use readily available tapioca flour. 
  2. You may use any variety of cheese that you love. I generally use cheddar cheese for the recipe though the traditional recipe calls for Parmesan Cheese. Mozarella cheese tastes equally well if you love the stretchy texture of the cheese.
  3. You may adjust the amount of milk by 1-2 tablespoons depending on your batter consistency. The batter should be slightly runny than a cake batter.
  4. The puffs can be made in standard muffin pans but the size and baking time of the puffs will vary accordingly.
  5. The batter for this recipe can be prepared in advance and stored in refrigerator for future use for up to one week.
