BAKE FOR FAMILY FUN SPECIAL

I am an ardent tea lover, starting my days with a hot ginger tea and evenings being incomplete without it. Be it a tiring day or a chit chat with friends, a hot cup of tea makes it all perfect. These Ajwain Methi Crackers are an excellent accompaniment for such moments for me.

This recipe of ‘Ajwain Methi Crackers’ is the first in my new series on ‘Bake for Family Fun’. My kids usually surround me whenever I enter kitchen to bake. Sometimes I just let them be and other times I snatch in the quiet times during the day to prepare my bakes. But, their excitement and enthusiasm for the process and taste of bakes prompted me to include them beyond spectators or my tasters. Hence, I am creating this series that will comprise of various easy recipes where my kids join me along, help me in all ways they can and we can proudly announce them as a ‘Family Bake’. 

I baked these little munchies on request by my friend Jyotsna who was searching appropriate snacks for her in-laws who have the regular heart and old age issues. She was wary to feed them with the easily available fried snacks considering their health concerns. The crackers were praised by one and all in her family.

These crackers taste just like the Methi Mathris we have loved through our childhood but with a twist of healthiness. The Ajwain Methi Crackers are made with a combination of oats and whole wheat flours. Flavored with Ajwain (Carom Seeds) and Kasuri Methi (Dried Fenugreek Leaves), they strike the right chords of your taste buds. The crackers are free from any saturated fats and the recipe uses olive oil that contains mono unsaturated fats which can rather improve blood cholesterol levels and decrease one’s risk of cardiovascular diseases.

Oats is a low-calorie food which slows digestion and makes you feel full longer. Thus, reducing your cravings and helping you shed a few pounds. They are loaded with dietary fiber and the antioxidants which are beneficial for heart disease and help lower the bad cholesterol. Being rich in fiber, oats helps in regulating bowel movements and hence prevents constipation. Since oats help stabilize blood sugar and reduce risk of type-2 diabetes, diabetics should consume oats regularly. They are also a rich source of magnesium, which is key to enzyme function and energy production, and helps prevent heart attacks and strokes by relaxing blood vessels, aiding the heart muscle, and regulating blood pressure.

Baking with whole wheat flour is healthier, mainly due to the fiber content, which will help stabilize blood sugar levels when consuming sugary pastries. Additionally, dietary fiber prevents constipation, lowers blood cholesterol and promotes weight loss. There is more nutritional value in whole-wheat flour than white flours. It contains more vitamins such as B1, B3 and B5. White flours have the same vitamins but lower in content due to the refining process.

Crispy, crumbly and perfectly spiced, these healthy crackers taste divine with a hot cup of tea or coffee. They even pair well with juices and drinks and equally delicious when just had on their own. Ajwain Methi Crackers

Healthy Crackers made with a combination of oats and whole wheat flours. Flavored with Ajwain (Carom Seeds) and Kasuri Methi (Dried Fenugreek Leaves). Made with olive oil, these crackers are free from any saturated fats.

Ingredients
  

  • 1 cup oats flour (quick cooking oats ground to flour)
  • 1 cup whole wheat flour
  • 3 tbsp crushed kasuri methi (dried fenugreek leaves)
  • 1 tsp ajwain seeds (carom seeds)
  • 1/2 tsp red chilli powder
  • 1/8 tsp turmeric powder
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup olive oil
  • 1/4 cup water

Instructions
 

  • In a large bowl, add all ingredients except olive oil and water. Mix well.
  • Add olive oil to the flour and spices mix.
  • Mix well using your hands till the oil is incorporated with the flour.
  • You should get a crumbly mix as shown here after mixing the flour and oil.
  • Add water little by little just to combine the flour into dough. Do not knead. Cover and let the dough rest for 30 minutes.
  • Preheat the oven to 190 degree Celsius. Take small amount of flour and roll with a rolling pin to about 1/4 inch thickness. Do not take bigger amounts since the dough tends to break while rolling.
  • Cut into square shapes using a cookie cutter. We used a square block of toy to cut the crackers into perfect pieces.
  • Place the cut crackers on a parchment sheet on a baking tray.
  • Bake the crackers in the middle rack for 15 minutes. After 15 minutes, flip the crackers to turn them upside down. Bake them for another 8-10 minutes or till the edges of the crackers start turning brown.
  • Let the crackers cool and enjoy the yummy crisps with a hot cup of tea or coffee. Pair it with juices or drinks or have them as it is. 

Notes

  1. The spices in the recipe may be adjusted as per ones taste preference.
  2. If you roll thicker crackers, they may take more time to bake. 
  3. Do not add excess water, this might make crackers softer. Just add enough to combine the flour into a dough. Depending on the quality of your flours, you may require one to two tablespoon of water extra.
  4. In case of unavailability of Kasuri Methi, fresh fenugreek leaves may be used. About 1 cup of fresh fenugreek leaves may be replaced with the Kasuri methi in the recipe. Accordingly water measurement will change since fresh leaves tend to contain their own moisture.
